Filled cupcakes to fill a teenager’s belly

Cupcakes for CS

Curious about the cupcakes that play a role in Chapter 11 of my latest book, Truth, Dare, Double Dare Promise or Repeat? The ones that were so addictive, my 15-year-old friends and I devoured an entire batch in one sitting?

My friend Jill asked for the recipe recently (she’s got teenagers in the house now, too), and my mother delivered. You know what they say about the way to one’s heart. So now I’m sharing it with you!

Jill’s finished product. Yum!

Filled Cupcakes

Cupcake ingredients:

  • 3 cups flour
  • 2 cups sugar
  • 1/2 cup unsweetened cocoa
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups water
  • 2/3 cup oil
  • 2 tablespoons white vinegar
  • 2 teaspoons vanilla

Filling ingredients:

  • 8 ounces cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 6 ounces chocolate chips

  1. Combine dry cupcake ingredients in mixing bowl. Combine wet cupcake ingredients in a separate bowl. Add wet ingredients to dry mix and combine.
  2. In a separate bowl, blend cream cheese, egg, sugar and salt with an electric mixer, then stir in chocolate chips.
  3. Fill muffin cups half full of chocolate batter. On top of each, add about 1 heaping teaspoon of cream cheese filling. Sprinkle with granulated sugar.
  4. Bake at 350 degrees for 20 minutes. Makes 25-30 cupcakes.
